No Wheat For Me

Today has been a good day.
A lot of little jobs were accomplished....
Cleaned my desk.....
Finished the laundry......
And baked these "flourless" peanut butter cookies.

Having a wheat allergy can be a drag....
until you come across a good recipe like these cookies, which are light and delicious!

Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 teaspoon baking soda
1 beaten egg

Mix well.  Roll into balls and then roll in sugar.  Bake at 350 for about 9-10 mins.
If you have a taste for chocolate like I did today, press a chocolate kiss into the center of
each cookie when they come out of the oven.
Enjoy and have a peaceful week!

Hi,Amy.....Just thought I'd drop by and grab this PB Cookie recipe for my friend. She just found out that she has a wheat allergy and is wondering what in the world she will be able to eat! :) I thought I remembered seeing this on your blog and I remember thinking they looked so good! I've been trying to get back into blogging a bit more but everything else just seems to be getting in the way. Or maybe it's that I'm letting everything else get in the way! Hopefully I can get on the ball here soon.

In any case, I hope you and the family are doing well. Are you on Facebook? If you are I'd love to add you as a friend. I'm on Twitter too but I think I like Facebook best. Let me know and I'll send you a friend request. Enjoy the rest of your week and thanx for the recipe!

Elaine :)
