A Recipe...But No Year in Review

It's another beautiful sunny Sunday morning here in Michigan....but it's COLD.
The weatherman is calling it Arctic. I agree.

So many gals out there posted about 2009 in review. You know, I can't do it.
I usually keep looking ahead, and find I spend little time looking back. We had so many happy moments and blessings last year to be sure. When those wonderful memories surface, I will enjoy each one of them.....but I don't plan to revisit last year in any detail. How about you....do you spend much time looking back?

Yesterday I put all the Christmas things away and did some cleaning....which always feels good to get done. I have a long to-do list (as usual) for all the organizing I must do around here and at my mom's house. If I think too long on it, agitation sets in. So, best to just tackle one job at a time.....that way I can keep crossing items off the list.

Since I'm always on the lookout for a quick yet hearty recipe, I want to share this one with you. My friend, Ann, made this for a small group of us recently and it was delish!

My gang really liked it too....a little like Italian Wedding Soup.

1 lb ground sausage (like Bob Evans or Jimmy Dean)
2 cups cheese tortellini
2 14 oz cans chicken stock
1 large onion, chopped fine
1 14 oz can diced tomatoes w/basil
2 ribs fresh garlic, minced
1/2 cup chopped spinach
1/2 cup chopped basil
1 cup water
parmesan cheese
salt & pepper to taste

Brown sausage, add garlic, onion, basil and spinach and cook until tender. Meanwhile, cook tortellini al dente & drain. Add stock, water and tomatoes to tortellini; add sausage mixture and season to taste. Serve with parmesan cheese sprinkled on top. Enjoy!

I feel like I could have written your 2nd and 3rd paragraphs! No looking back for me either -- who has the time -- I can't keep up with the present. And back to work tomorrow -- ugh! Happy New Year Amy!

I don't look back either, it's all about the future for me and what is coming ahead, no sense in worrying about what has already happened :)

Taking one day at a time and making plans for the coming year is always exciting for me. Each year the farm grows a little...just enough to keep it interesting but not overwhelming....well not too overwhelming :)

We have plenty of home grown sausage...can't wait to try the recipe. Thanks for sharing :)

Hi, Amy... The soup sounds delicious! It's not all that cold here (70 degrees this afternoon) but we love soups this time of year. I'll have to try this one. By the way, the Apple Cake was great! Thanks for sending me the recipe....it was a big hit..both times I've made it so far. :) Sounds like you're ready for a new year...me too! The Lord was really good to us this past year even though there are always a few bumps in the road. Can't wait to see what this year brings.

I don't live in the past, but I do reflect on it. It makes me happy to remember the good times and strengthens my faith to see how God has brought me through the hard times.

Happy New Year, Amy. The past is past and I can bearly get into the present so I am looking forward to a wonderful 2010. I am taking down the Christmas decorations today but honestly it didn't feel like Christmas this year without the snow and bone-chilling cold. It does get cold here (down in the 30s) but not like MI. Well, here's to taking one day at a time:-)

I'm not doing a year in review either. It exhausts me just reading some of them! Some are good and brief, but some just make me feel inadequate at how many projects someone got done and I didn't! Oh well, I got done what needed to get done and God's grace got me through it.

Hello Dear Amy!

The recipe sounds wonderful, thanks so much for sharing it. All the decorations around our house are too all put away. It seems so much easier to put them all up than to return them all to their proper places, tiring for sure.:o)

Your shared recipe sounds delicious! Almost similar to Olive Garden's Tuscan soup which uses baked potato but no pasta or tomato. Very nice with cold weather, I'm sure!
